….. what could be easier than this for a store cupboard snack or speedy meal.

As we are drawing to the end of the Easter holidays my meal repertoire is starting to waiver. I had this delicious lunch out with a friend last week and I though what a simple meal to throw together with all the things we have in our cupboard.

Take two slices of sourdough, lightly toasted, a tin of sardines in olive oil (oil drained off), a jar of caperberries, a bag of watercress or rocket, a splash of balsamic vinegar and some rock salt and hey presto a quick and easy light meal. You could even slather your toast with some mashed avocado for a delicious layer of creaminess and throw in a couple of sliced beetroot on the side too that’s what I did last night for dinner and it was delicious.

P.S. A bit about Sardines if you fancy.
