Bone Broth

Yields1 Serving
Ingredients
 1 onion, peeled
 4 cloves of garlic, peeled
 2-3cm chunk of ginger, peeled
 1 turmeric root, peeled
2 large carrots, peeled if not organic
 4 celery sticks
 2 tbsp apple cider vinegar
 1 large bunch of parsley
 3 bay leaves
 6 black peppercorns
 1 tsp sea salt
1 large sprig of fresh thyme
bones of one large organic chicken or 3-4 big quality beef bones with marrow
Directions
1

Rough chop all the veg. (If you buy organic there is no need to peel carrots etc..).

2

Pop them in a generous casserole dish along with the chicken carcass (I break this up into three pieces) or beef bones. Add all the other herbs along with 2 or so litres of hot water to cover everything.

3

Lid on and pop it in a hot oven approx 220° for about 20-30 mins then lower the temperature to 120° for another 4 hrs or so. (If you forget to take it out and it stays in until morning it won’t be the end of the world, I prefer mine like that !). I find if you are making a beef stock it does well from staying in the oven for a good 24 hrs.

And a little bit more...
4

I make a batch and pop half in jars in the freezer and the other half I keep in the fridge.

This makes a great drink especially in the winter when you fancy a change from your usual cuppa at teatime, to fend off those energy slumps in the late afternoon or as a calming nourishing mug before bedtime. AND, this bone broth is packed with collagen, vitamins and minerals too.
