Broccoli & Chermoula Soup

Ingredients
 ½ onion, finely chopped
 1 knob ghee or a glug of olive oil
 3 fat cloves of garlic, finely diced
 300 g broccoli, florets, chopped fine
 1 full cup of thawed frozen peas
 4 cups vegetable broth
 2 handfuls of fresh spinach
 3 tbsp chermoula paste (north african spice paste similar to green harissa paste)
 2 tsp lemon juice
 salt and pepper to taste
Optional
 double cream, chopped parsley or coriander to serve

Heat the ghee or olive oil in a saucepan until melted then add in the onions and soften for approx 5 minutes. Add the garlic and cook for a minute to soften that too.

Next, add the vegetable broth and the broccoli florets and bring up to a simmer. After two minutes add the peas and simmer for a further few minutes - do not over cook the peas !

Add in the spinach and cook until it has wilted. At this point the broccoli should still be green (we don't want brown soup!).

Pour the veg soup, lemon juice and chermoula paste into a blender (you may need to do this in batches) and blend on the highest setting until smooth taking care as you whizz, you don't want soup all over the kitchen ceiling. Season to taste.

To serve, pour the soup into bowls. Add a drizzle of double cream and some parsley or coriander if you have some to hand.
