Energy Boosting Coconut Cubes

Pop the desiccated coconut into a strong blender. Start on a fairly slow speed for a minute or so until the coconut releases its oils and starts to change into a thick paste. Build the speed up until it becomes a thick liquid (this takes about 3 minutes in my Thermomix). You need to be patient as it can take a bit of time.
Keep blending until your machine has broken up as many of the bits as possible (there is no exact science here as it depends on the machine you are using). Make sure you stop periodically and wipe down the sides with a spatula.
When it is runny enough to pour, fill up a silicone ice cube tray with the liquid until about 3/4 full. I like to spoon in 1/3 of a teaspoon of cacao nibs or chia seeds, push them down into the liquid and incorporate with the other end of the teaspoon and then top the cubes off with a bit more coconut liquid.
Pop them in the freezer for about an hour or so, then push them out of the silicone cube tray (you may need to loosen the cube tray with a bit of hot water first as they are quite solid to push out). This quantity makes two trays worth. I put one lot in the fridge and the other in the freezer. They keep for months in either location.
These little cubes don't look like much but they pack a serious punch in the energy department. If you are trying to reduce your sugar intake when that energy slump hits then this is just the thing.
They are low in sugar and the high fat content is completely satiating and will help to send the right signals to your brain so you can by-pass that naughty snack.
They are very simple to make and last for ages in the fridge or freezer. They are very firm to bite into but I have grown to love them.
