Strawberry & Raspberry Ice Cream

Ingredients
 500 g strawberries
 150 g raspberries
 7 soft dates
 300 ml double cream
 a generous squirt of lemon juice
Notes
 This is a great way of using up less than perfect or over ripe soft fruits. It can also be made by buying the unperfect frozen berries too for an economical and delicious low sugar ice cream made with just a handful of ingredients.

Whizz the fruits and dates in a blender until smooth. Add the double cream and whizz again so everything is blended together.

Pour into an ice cream maker and set going for approx. 20 minutes. Once it is soft, pour the ice cream into a tub and freeze.

If you don't have an ice cream maker, use the usual freeze then blend method to make your ice cream.

This ice cream is full of goodness and does not contain any nasties that you may find in shop brought ice cream. As it only contains natural fruit sugars that is a bonus too.

It is a great way of using up less than perfect strawberries that you may have sitting in your fridge in the summer months.
